This book is aimed at the absolute beginner and is one of the most popular tube amp books on Amazon, Vacuum Tube Amplifier Basics by EJ Jurich. It's not specific to guitar tube amps but it's well written. This is another favorite for beginners, Robert C. Megantz, Design and Construction of Tube Guitar Amplifiers
This is an oldie but goodie, filled with a wealth of tube circuit information: RCA Receiving Tube Manual, RC30.
If you're a 5F6-A Bassman fan you need a copy of Richard Kuehnel's, Circuit Analysis of a Legendary Tube Amplifier: The Fender Bassman 5F6-A, 3rd Edition.
This is another good book on tube preamp circuits: Richard Kuehnel, Vacuum Tube Circuit Design: Guitar Amplifier Preamps, 2nd Edition.
This is the best book currently in print about tube power amps, Richard Kuehnel's, Vacuum Tube Circuit Design: Guitar Amplifier Power Amps
If you want to really understand what's happening in tube amp circuits when overdriven then you need Neumann & Irving's, Guitar Amplifier Overdrive, A Visual Tour It's fairly technical but it's the only book written specifically about guitar amplifier overdrive. It includes many graphs to help make the material easier to understand.
This is a good and thick reference volume, Morgan Jones, Valve Amplifiers, 4th Edition.
